Veggie Fritters

I’m always on the hunt for fast and flavorful ways to add a veggie component to any meal. And now, if you have 25 minutes you have the easiest and tastiest way to eat your veggies: Quick and Crispy Vegetable Fritters.

Recipe Ingredients

  • 1 can sweetcorn, drained
  • 50g plain flour
  • 1 clove garlic, finely chopped
  • Salt/Pepper to taste
  • 2 tablespoons water
  • A little oil
  • 1 Spring Onion, thinly sliced
  • 1 tomato,, chopped
  • Juice of ½ Lemon
  • 1 tsp Smokey Creole Blend

Optional extras:

hummus. tahini, sweet chilli sauce, fresh parsley

Recipe Instructions

In a medium bowl, combine the sweetcorn, flour and spices. Add two tablespoons of water and use a fork or masher to combine the ingredients until they are well blended.

Form the mixture into thin patties.

In a pan heat oil until it’s hot. Then add the patties and cook until browned and fully cooked through, about 3-4 minutes per side.

In a bowl mix together the lettuce and spring onions with a little oil and lemon juice and add the cherry tomatoes.

Place the cooked fritters on a plate and serve with the salad along with any sauce or dip of your choice.
