Recipe Ingredients
- Glug of oil
- 1 Onion, sliced
- 1 Potatoes, cubed
- 1 medium leek, sliced
- 1 pint vegetable stock
- salt and freshly ground black pepper
Optional extras:
Blob of creme fraiche, or some cream at the end!
Recipe Instructions
1. Heat the oil in a large pan and add the onions, potatoes and leeks. Cook for 3-4 minutes until starting to soften. 2. Add the vegetable stock and bring to the boil. Season well and simmer until the vegetables are tender. 3. Whizz with a hand blender or in a blender (if you have one) until smooth. If you don’t, you can use a potato masher or a fork to squish the veggies a little bit, or just enjoy a chunky soup! 4. Reheat in a clean pan, stir in the cream or cr me fra che, heat through and serve. |
