Recipe Ingredients
- Oil
- 2 cloves garlic – finely chopped
- 2 tsp herb blend
- water
- ½ vegetable stock cube
- 100g fresh tomatoes – left whole
- 100g pasta
- salt
Optional Extras
- cheese
- fresh basil
- spinach
- olive oil
Recipe Instructions
Prepare all ingredients as described. Cook the garlic over a medium heat in a saucepan with a little oil and a touch of salt until they start to brown (1 minute). Add the tomatoes and cook for 5-7 minutes or until they soften before adding the herby spice blend and cooking out for a further 30 seconds until they smell delicious. Turn off and cover. Now, crumble the vegetable stock cube into a separate pan of water and bring it to the boil. Add the pasta and cook until cooked and desired texture (10-12 minutes). Once cooked, add 2-3 tablespoons of the pasta water to the tomato mix and then drain the pasta and add into the tomato mix as well. Finally, mix everything together, drizzle some oil over the top, salt to taste and then finish with any of the optional ingredients |
